Mangalorean Tawa Fry Masala

Mangalorean Tawa Fry Masala Seafood Dish

A signature dish from the Mangalore coast where rich, fiery masala meets the freshness of seafood. Each piece is seared on a tawa to lock in the bold, smoky flavors of traditional Mangalorean cooking.

Recipe

  1. Marinate the Fish

In a bowl, mix Mangalorean Tawa Fry Masala with lemon juice, ginger-garlic paste, and a spoon of coconut oil. Add cleaned anchovies, mackerel, or sardines, coat evenly, and rest for 20 minutes to let the spices infuse deeply.

  2. Heat the Tawa

Drizzle 2–3 tablespoons of oil on a flat tawa or pan. Once hot, place the marinated fish and cook on medium flame until the edges start to brown.

  3. Flip and Roast

Turn the fish carefully and roast the other side until it becomes golden and crisp. Sprinkle a few drops of coconut oil for added aroma and authentic coastal flavor.

  4. Garnish and Serve

Garnish with onion rings, curry leaves, and a squeeze of lemon. Serve hot with neer dosa, boiled rice, or Malabar parotta.
